How To Make Ghana Okro Light Soup

Okro soup is one of Ghana’s favourite  soups and it can be served with various accompaniment  like banku,rice, kenkey etc. It’s one of my personal favourite which is why I have put this recipe together for you

Ingredients

  1. beef or goat meat
  2. Ginger
  3. Garlic
  4. scotch bonnet pepper
  5. Baking soda
  6. salt
  7. Spinach
  8. Okro
  9. Palm oil (optional)
  10. dried oysters (optional)
  11. fermented fish (optional)

Cooking Instructions

  1. Step 1

    Wash all the meat and vegetables an set aside.

  2. Step 2

    Pour cow skin in a pot, cut in onions and cook till soft. Thanks if it already soft, you can jump this.

  3. Step 3

    In another pot pour the meat, add the blended garlic and ginger, seasoning cubes and salt. allow to cook.

    keep meat stock as foundation for this recipe.

  4. Step 4

    Divide okro into 3 parts. cut 2/3 okro in round rings and 1/3 into longer round chunks.

  5. Step 5

    Pour okro into pot, add scotch bonnet pepper which you did not cut(depending on the way you like heat), onions, 1 teaspoon baking soda, salt and water and put on medium heat. once it foams, turn off heat.bicarbonate give better result than kanwa (potash) but can used if baking soda is not available.
