Notes on the Spinach
When using spinach to prepa Egusi Soup, you do not need to do much because it is just like using ugu to cook Egusi Soup.
- Because spinach contains lots of water, you may need to steam it for a bit then throw away the water. This spinach water has a tendency to ruin the taste of Egusi Soup.
- You may have to reduce the quantity of spinach you add to the Egusi Soup because spinach has a strong kind of sweet flavour.
